The Dr Oz Anti Aging Salad

- 1 small cucumber
- 1 apricot
- 1 blood orange
- 1/2 Eggplant cube
- Olive oil
- Black pepper
- Apple cider vinegar
- Substitute your greens for watercress. Slice up the apricot and cucumber and add to the watercress.
- Then cube half or more of an egg plant and dribble over some sliced garlic, olive oil and black pepper.
- Roast for 40-45 minutes at 400 F then remove and place on to of salad.
